Ingredients:
- 300 g of T65 flour
- 100 g of almond powder
- 120 g of cane sugar
- 7 g of baking soda
- 3 eggs
- 100 g of butter
- 135 g of yacon (earth pear)
- 100 g of chocolate chips
- 1 pinch of fleur de sel
Steps:
- Peel a piece of yacon (earth pear) to get between 130 and 140 g (it doesn’t need to be exact). Cut it into small pieces.
- Bring water to a boil and add the pieces of yacon. Cook for 30 minutes.
- Blend the flesh. Add the butter in pieces to the warm yacon so it melts. Mix well.
- Sift the flour and mix it with baking soda, sugar, salt, chocolate chips, and almond powder.
- Pour the dry ingredients into a mixing bowl, add the eggs, then the yacon purée and melted butter.
- Mix again
- Preheat the oven to 180°C (350°F).
- Pour the batter into a greased 20 cm (8-inch) baking pan.
- Bake for 45 to 50 minutes. The tip of a knife should come out clean.
